Bolas energéticas de limão e coco
Naquelas alturas do dia em que temos mesmo de comer alguma coisa, mas não queremos estragar a dieta... Estas bolas energéticas têm cerca de 49 calorias e, fresquinhas, são uma delícia.

São mesmo lindas e tão fáceis de fazer. O gosto a limão está bem evidente, o coco fica em segundo plano. Os dois sabores em conjunto criam uma combinação deliciosa.
A textura da massa nem cola nas mãos e fazem-se num instante. Depois é só deixar refrescar no frigorífico.
Dão energia e alegria e tiram a fome... mesmo!

Ingredientes
1 ½ chávenas de caju
¼ chávena de farinha de coco
¼ chávena de coco ralado
¼ chávena de sumo de limão
2 colheres de sopa de xarope de agave (ou outro adoçante líquido)
1 colher de sopa de óleo de coco
Como fazer:
Estas quantidades vão dar para aproximadamente 40 bolinhas.
Deve ser feito no processador de cozinha ou picadora.
No processador, picar os cajus até ficarem em migalhas finas.
Juntar os restantes ingredientes e processar até ficar bem ligado e com aspeto de uma massa moldável.
Retirar do processador e fazer cerca de 40 bolinhas com aproximadamente 3 cm, rolando pedaços de massa nas mãos.
Deitar um bocadinho de coco ralado num prato e rolar as bolinhas para envolver.
Levar ao frigorífico a refrescar.
